You wont get all the fast cars straight off after all there are 8 chapters to this game and what fun would it be if you unlocked all the best cars

One way you can use the mechanic is you are being chased by 4 or 5 cop cars down a 6 lane highway, so you can jump to a car on the opposite side of the highway thats like 200 yards ahead of you and aim it right into oncoming traffic and use it to take out two of the cars chasing you, its a fantastic mechanic and makes the game incredibly fun
